For the chicken:
- 4 chicken breasts, split and pounded to 1/2-inch thickness
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 1/2 teaspoons turmeric powder
- 1 pinch salt
For the brine:
- Water (enough to cover chicken breasts)
- 1/4 cup Kosher salt for every 4 cups water
- Optional aromatics, such as fresh ginger, star anise, black peppercorns, or lemongrass
Quick and easy weeknight dinner, mild enough to eat with gastric issues.
1. Prepare the brine, and let the chicken breasts sit in it for 15 to 30 minutes.
2. Add the honey, soy sauce, turmeric powder, and salt to the chicken, stir to combine well.
3. Preheat the oven to 400 degrees F and bake chicken for 20 minutes, until internal temperature reaches 165 degrees F. Serve hot, ideally over white rice with steamed vegetables.
